Breaded Potato Balls

After portioning out many freezer meals using Christmas leftovers, we still had plenty leftover.

We’d made a combination of mashed russets and yams and still had that and some stuffing left in the fridge. Snack time!

I mixed some stuffing and into the potato mixture (I also added some vegetable powder) and started heating up the deep fryer.

I set up my breading station: one container with a flour and spice mix, another with lightly whisked eggs and milk, and the third with crushed bread crumbs.

I used a tablespoon to scoop out equal amounts of potato, yam, vegetable powder and stuffing mix and rolled each into a ball.
(I’ve made these with just mashed potatoes if that’s what you have, go for it!)

Then coat each ball in flour, egg, crumbs, then egg, and then crumbs again. Place on a plate or whatever until you’ve done them all.

Deep fry until deep golden brown.

Serve with or without a dip (I used spinach dip since I still had a bit leftover)! They are crunchy on the outside and full of soft potato goodness on the inside.
