Do you do many experiments in your kitchen?
I think it makes Kevin’s perfectionism radar start twitching – but I love trying out new combinations and finding interesting new ways of doing things.
Kevin is a by-the-book kind of guy, he likes things in order and the “right” way. Personally, I jump all over that being wrong stuff until I figure out how to make it work – my way.
It makes for an interesting balance when we’re in the kitchen together!
I had one apple and three people…experiment time.:) Deep fried apples coming up.
I pulled out a #12 cast iron pan and added about 1/2″ of oil, then heated it up on high heat (about 7 on my stove).
A word about cooking with oil. It can be dangerous. Never never never add water to hot oil. Never. If you do have a fire, use a lid to smother it, or even better, a fire extinguisher. (A very worthwhile investment!)
Moving on…
While heating up the oil, use a mandolin or sharp knife to cut thin apple slices. Place slices into oil in batches. When adding apple slices to hot oil, place closest side (to you) in the oil first, this way when you let it go if any oil splashes, it will splash away from you.
Fry the first side of apples until golden, or until desired color. Use tongs to flip and cook second side. The second side won’t take long.
Use a slotted spoon to transfer fried apple slices to a paper towel to absorb excess oil.
While still warm, toss fried apples with icing sugar. I added a little cinnamon to the sugar as well. But you can skip the sugar all together and they are still really nice.
If you don’t eat them all straight away as fried apple chips – how simple is that for dressing up ice cream?!?

It was so hard to save enough to go with our ice cream dessert, I kept sneaking back to the kitchen and eating them lol.

This is awesome! I never heard of deep fried apple slices… This must taste sooo good. And add that to the Ice Cream? YUMMY! :)
