Meatloaf
My childhood experience with meatloaf was a somewhat dry mixture of ground beef and bread coated in ketchup – trust me, this is better. ;)
Serve with buttery mashed potatoes and steamed vegetables for a traditional dinner…and if you should happen to have any leftovers, slice it up for some extra yummy sandwiches.
Meatloaf
Preheat oven to 350 F.
Combine:
1 pound lean ground beef
1 stalk celery, chopped
1 small onion, chopped
2 cloves garlic, minced
2 pieces of bread, crumbled
spices – salt, pepper, thyme, ginger
1/2 tsp. HP sauce
1 tbsp. mustard
1/4 cup greek yogurt or sour cream
1/8 cup brown sugar
Press into loaf pan and bake for 40 – 50 minutes or until done.
Let rest 5 minutes before cutting.

Oh, sorry, I forgot that not everyone has tried it! It was always a common fridge item in my family. I added a link in the recipe. HP is a brand of steak sauce made with malt vinegar, tomatoes, dates, and spices…it’s very good.:)

Meatloaf is also my childhood’s favorite. I’ve eaten meatloaf from many place but mom’s is still the best.
