Banana Bread

This banana bread is packed with banana flavor, and an excellent way to use up lots of overripe bananas.

It does dirty quite a few bowls and bakes a long time – but it’s worth it!

The loaf comes out very moist, but retains great structure.

If you’re also a tea lover – remove stickers, rinse before use, and save up your banana peels in the freezer for Banana Peel Tea

Ingredients

  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup butter or margarine
  • 3/4 cup lightly packed brown sugar
  • 2 eggs
  • 4 overripe bananas
  • 1/2 tsp. vanilla extract
  • 1/3 cup chocolate chips

Method

Step 1

Preheat oven to 350F. Grease a 9.5 x 13.5" loaf pan.

Step 2

Combine flour, baking soda and salt in a large bowl. Put aside.

Step 3

Mash bananas with a potato masher and put aside.

Step 4

Using an immersion (stick) blender, beat 2 eggs and vanilla for 1 minute. Put aside.

Step 5

Cream together butter and sugar.

Step 6

Add egg mixture, bananas and chocolate chips. Stir to combine.

Step 7

Add wet ingredients to dry mixture and combine,

Step 8

Pour batter into greased loaf pan and bake 70 - 80 minutes or until a toothpick inserted in the center comes away clean.

Step 9

Cool in pan on wire rack for 10 minutes. Turn out onto wire rack.

    Mmm. Banana bread is my favorite! Trust me on this one, try swapping out some of the butter for greek yogurt next time, adds an extra little bit of flavor and keeps the bread super moist!
