Butter Cupcakes

Simple small batch of delicious cupcakes.
Iced with Butter Icing.
Ingredients
- 3/4 cup all purpose flour
- 1/2 cup sugar
- 1 1/4 tsps. baking powder
- 1/4 tsp. salt
- 1/4 cup softened butter or margarine
- 1 egg
- 1/4 cup + 2 tbsps. milk (I used 2 tbsps. cream)
- 1/4 tsp. vanilla extract
Method
Step 1
Preheat oven to 400F.
Step 2
Combine all dry ingredients and blend with butter.
Step 3
Mix in vanilla and milk.
Step 4
Add egg and beat until batter is smooth.
Step 5
Grease or line 12 muffin tins and fill each 1/2 full of batter.
Step 6
Bake at 400F for 20 minutes or until done.
Step 7
Cool on racks.
