Buttermilk Biscuits

I’ve made these replacing the buttermilk with milk kefir whey. Whey adds a really nice flavor to bread. Try not to handle dough more than necessary for best results.

Ingredients

  • 2 cups all purpose flour
  • 1/4 tsp. baking soda
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 6 tbsps. very cold butter
  • 1 cup buttermilk, or whey

Method

Step 1

Combine all dry ingredients.

Step 2

Cut in butter.

Step 3

Add buttermilk and mix to just combine. If too dry, add a little more buttermilk, dough should be wet.

Step 4

Turn out onto floured surface. Using hands, gently push dough out, fold, and press again to 1" thickness.

Step 5

Cut into rounds and place on baking sheet. Biscuits placed closer together will be softer than those spaced further apart on sheet.

Step 6

Bake for 10 - 12 minutes or until a light golden brown.
