Cherry Flip Cookies were always my favorite at Christmas time, grandma made them every year.
These also freeze well.
- jar of maraschino cherries (6 ounces)
- 1 cup butter
- 1/4 tsp. salt
- 2 cups all purpose flour
- 1/2 cup icing sugar
- 2 egg yolks
- 1/2 tsp. almond extract
Mix all ingredients except cherries.
Wrap dough in plastic and chill in fridge 20 minutes.
Roll dough to 1/4" thickness.
Cut dough in 3" rounds.
Wrap each round over one cherry. Place on ungreased cookie sheet.
Bake at 325 F for 25 minutes or until lightly golden.
If you want them iced; mix the syrup from the cherries with icing sugar (to desired consistency). Dip cooled cookies in icing.
