Cranberry Raisin Rye Buns2014-07-06
- Yield : 12 buns or muffins
These can be made by hand or machine and baked either on a sheet or in muffin tins.
Serving Suggestion (as pictured): Slice muffins/buns in 3. Top with cream or kefir cheese (kefir pictured), sliced pickle and tomato shredded cheddar and freshly ground black pepper. Put in toaster oven just until cheese is melted.
- 1 1/8 cups water
- 1 tsp. molasses
- 1 1/2 tbsps. butter
- 1 cup rye flour
- 1 2/3 cup all purpose flour
- 1 1/2 tbsps. sugar
- 1 tsp. salt
- 1 tsp. cocoa powder
- 2 1/4 tsp. dry active yeast
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 cup dried cranberries, chopped
- 1/4 cup raisins, chopped
- 1/4 cup crushed pecans
Add ingredients to bread machine as recommended by manufacturer. Use dough setting.
When cycle is finished, turn dough onto lightly floured surface and divide into 12 equal portions.
Shape into buns. Place on lightly greased sheet or in greased muffin tins.
Bake at 350 degrees for 12 - 16 minutes. Cool on wire rack.
