The Everything Cookie

Well, the Almost Everything Cookie;).

Kevin requested oatmeal cookies, but he also wanted banana and peanut butter. I had to create a recipe to suit. I figured oatmeal cookies need raisins, and what the heck, let’s throw some coconut in there.

The flavor is amazing. These cookies are dense, and soft with a little bit of crunch on the bottom. There is just enough sweetness, and a little extra burst of flavor when you get a bite with raisins. And just a hint of coconut.

Yum!

I know these will be requested many times in the future.:)

Note: All or part of the peanut butter can be substituted using butter or margarine. I used 1/4 c butter, 3/4 c peanut butter. Next time, I want the peanut butter flavor a bit stronger, so I’ll use all peanut butter, which is how I’ve decided to write the recipe.

Ingredients

  • 1 cup peanut butter, crunchy or smooth
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 overripe banana
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 cups quick cook oats
  • 1/2 cup raisins
  • 1/2 cup shredded coconut

Method

Step 1

Preheat oven to 375F. In a large bowl, cream together peanut butter and sugars.

Step 2

Beat in eggs, one at a time.

Step 3

Stir in vanilla.

Step 4

Mash a banana and add to mixture. Stir to combine, put aside.

Step 5

In medium bowl, combine flour, baking soda, salt, and cinnamon.

Step 6

Add dry ingredients to wet ingredients and stir to incorporate. Add oats, raisins, and coconut. Mix well.

Step 7

Using 2 spoons, drop dough onto greased baking sheets, 12 per sheet, using about a walnut sized amount of dough. Leave as is, or flatten slightly with a fork.

Step 8

Bake for 8 - 10 minutes. Note - cookies will be browned on the bottom but still appear soft on top. The top becomes firmer while cooling.

Step 9

Leave cookies on baking sheet on cooling rack for 1 minute before removing to a wire rack.

    These sound so good. I love cookies probably more than many other desserts simply because I can grab one to enjoy without having to stop what I’m doing to eat it. Which could also be dangerous when I don’t know when to stop. Thanks so much for sharing.

    I would have never guessed that all those ingredients in one cookie would taste ok..nevermind great! This is the most innovative cookie recipe I’ve ever come across!

      Oh, thanks Kristin.:) They’ve become a favorite after this large batch was gone so quickly! I was sneaky though – I made a dough ‘log’ with the last dozen cookies worth of dough, wrapped it in plastic and froze it for emergency cookie use; which went very quickly lol.

      You could use butter instead of the peanut butter, or 1/2 & 1/2 or whatever you like – depends how much peanut butter flavor you want! They were very good using all PB, and Kevin raved about them (he normally makes for a tough critic).

    I think that my favourite part of making cookies, is eating the dough! When I was young, my mom and I used to bake oatmeal cookies a lot. And, probably ate about half of the dough out of the fridge, from the log, before we cut it!!! I love oatmeal and shortbread cookie dough! It’s even better than the cookies!!!

    Why the heck not?! Through everything you can find into the cookie! I remember one Thanksgiving where we didn’t have a lot, so for the stuffing – aside from the bread – we through in mushrooms, apples, bananas, green peppers….you name it!!! LOL

    This recipe looks so good, but I am afraid to make it. Cookies set me off. I have one, but then have to have two, then three, etc. I could eat like 20 at one sitting! It’s terrible… lol. I have such poor cookie will power. hahaha
