- 2 cups all purpose flour
- 1/4 cup finely grated ginger
- 2 tsps. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 cup butter
- 1 cup sugar
- 1 egg
- 1/4 cup molasses
Mix together dry ingredients.
Add finely grated ginger (or grated AND chopped), mixing to coat ginger. Put aside.
In another bowl, beat butter until creamy.
Beat in sugar a bit at a time.
Beat in egg and molasses, then add flour a bit at a time. Mix until well blended.
Roll dough into 1" balls and place 2" apart on baking sheets. I prefer to press tops with sugared fork, but they can be baked as is.
Bake at 350 F for about 10 minutes. Allow to cool on cookie sheet for one minutes, then remove to wire rack to finish cooling.
