Plum-Ginger Onion Relish

So tasty and easy. Use whatever type of plums you have available, I used golden. Your choice of onions will affect the flavor (but any kind will definitely work!). Shallots would also work. Use your favorite spices to flavor to your taste.

Good with grilled meat, mixed with tuna or salmon for sandwiches, or over vegetables. Will keep in fridge for 2 weeks, or freeze in serving sized bags.

Ingredients

  • 1 tbsp. vegetable oil
  • 2 onions, finely minced
  • pinch coarse salt
  • 1/2 tsp. fresh ground peppercorns
  • 8 small golden plums, pitted and diced (diced skins are optional)
  • 2 tbsp. sugar
  • 2 tsp. apple cider vinegar
  • 1 tsp. lemon juice

Method

Step 1

In small saucepan, heat oil.

Step 2

Saute onion and ginger in oil.

Step 3

Add salt and pepper.

Step 4

Cook until onions are softened. Add plums. Add up to 1/2 cup water if needed.

Step 5

Simmer until plums are soft. Add vinegar and lemon juice. Simmer 5 minutes. Season with salt and pepper to taste.
