Stuffed Green Bell Peppers

A simple, delicious and impressive meal.

Leftover rice could be used up and cut 40 minutes off the timeline of this recipe.

One stuffed pepper makes a good sized meal!

Short on tomatoes? Substitute a can of mushroom soup!

I made 6 large green bell peppers for this recipe.

Ingredients

  • 3 - 4 cups cooked brown rice (1 cup raw makes 3 - 4 cups cooked)
  • 1 lb. Italian sausage
  • 1 medium onion, diced
  • 2 - 3 celery sticks, diced
  • 1 garlic clove, minced
  • 2 carrots, shredded
  • 1 - 10 oz. can diced tomatoes, or 2 - 3 fresh, diced
  • salt & pepper to taste

Method

Step 1

Cook 1 cup rice to make 3 - 4 cups cooked rice. Set aside to cool.

Step 2

Brown sausage. Cut into slices and set aside.

Step 3

Preheat oven to 375F. Prepare vegetables. Set aside.

Step 4

Prepare peppers by slicing off tops. Remove stem, seeds, etc. Reserve caps.

Step 5

Combine cooled rice, sausage, tomato, vegetables and spices.

Step 6

Spoon into peppers and place caps on top. Place peppers in roasting pan.

Step 7

Roast at 375F for 30 - 40 minutes. Peppers are done when skin begins to wrinkle.

      We really love spicy foods so the Italian sausage just gives it a nice little kick of heat.

    Thanks so much on sharing your recipe on Stuffed Green Bell Peppers! My mom used to make these all the time when we were kids and living at home! I never cared for the green peppers, so I ate the insides only! After being married and having kids, we started to grow a garden every year. One item which we grow are green peppers. I use green peppers to cook with all the time! I even dice it up in my chicken salad! However, I just can’t get myself to eat a green pepper all by itself! I don’t know why, it must be something in my mind that I can’t eat them by themselves! I love the flavor that they give to foods too! I’ve made stuffed peppers once and no one ate the pepper, so, I haven’t made them since! My kids and husband prefer for me to make them filled cabbage instead! Thanks for the terrific recipe!       That is so funny no one ate the peppers! You could try using an orange/yellow bell pepper, they are a bit sweeter, maybe everyone would eat them? Let me know how it turns out!:) I’m glad it brought some nice memories for you.:) I hope you enjoy it!!
