Whole Grain Bread

Ingredients
- 2 3/4 cups hot water
- 1/3 cup olive oil (or preferred oil)
- 1/3 cup honey (or sugar)
- 2 tbsps. molasses
- 1 tbsp. salt
- 7 1/2 cups whole grain spelt flour (or other whole grain flour)
- 2 tbsps. dry active yeast
Method
Step 1
Mix first 5 ingredients.
Step 2
Add 2 cups flour.
Step 3
Add yeast.
Step 4
Mix in 4 cups flour. Keep adding flour and mixing until dough is an even consistency, adding 1/2 cup flour at a time until dough pulls away from bowl and becomes tacky. (6 1/2 - 7 1/2 cups).
Step 5
Cover with tea towel and let rise in oven with light on and door closed for 30 - 45 minutes.
Step 6
Grease 2 large loaf pans. Fold dough down to original size.
Step 7
On floured surface, divide into 2 equal portions. Shape into loaves and place in pans. Let rise in oven until almost doubled in size.
Step 8
Remove from oven and heat oven to 350 degrees. Bake for 36 minutes. Cool on wire racks.
