Yogurt, Granola & Coconut Cookies

I was really craving chocolate chip cookies with macadamia nuts and oatmeal – but I don’t have any of those things… These turned out so good I’m kinda glad I had to improvise.

Ingredients

  • 1/2 cup softened butter (or margarine)
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda mixed with 2 tsps. water
  • 1 1/2 cups all purpose flour
  • 3/4 cup shredded coconut
  • 3 Quaker Granola Yogurt Bars

Method

Step 1

Preheat oven to 350F.Use food processor to break down granola bars into a "meal" consistency. Put aside.

Step 2

In medium bowl, cream together butter and sugars.

Step 3

Add egg. Mix.

Step 4

Add remaining ingredients in order given.

Step 5

Scoop out approx. 1 tbsp of dough per cookie onto ungreased baking sheet and gently flatten with the back of a spoon.

Step 6

Bake for 12 minutes or until bottom edge of cookies are golden brown.

Step 7

Let cool on baking sheet 1 minute before removing to a wire rack to cool.

      If you’ve ever tried those yogurt bars, you’ll notice they add so much sugar and who knows what to the topping, there is really no yogurt flavor! LOL
