Zucchini Bread

My favorite zucchini bread. This version has just a hint of sweetness, and bakes up moist and delicious.
Ingredients
- 3 cups all purpose flour (substitute up to 1 cup whole wheat flour)
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 3 tsps. cinnamon
- 3 eggs
- 1 cup vegetable oil (or substitute 1 cup apple sauce, or use 1/2 cup avocado processed with 1/2 cup oil)
- 1 cup white sugar
- 1 cup packed brown sugar
- 3 tsps. vanilla extract
- 3 1/2 cups grated zucchini
- 1 cup chopped walnuts or chocolate chips (optional)
Method
Step 1
Preheat oven to 325 F.
Step 2
Mix flour, salt, baking powder, baking soda and cinnamon. Set aside.
Step 3
Whisk together eggs, oil, vanilla, and sugar. Add flour mixture and mix well.
Step 4
Add zucchini and nuts/chocolate chips and mix.
Step 5
Pour into 2 greased and floured 8 x 4 loaf pans.
Step 6
Bake at 325 F for 45 - 55 minutes, or until toothpick inserted in the center of loaf comes away clean. Leave in pans for 20 minutes on cooling racks, remove from pan and let cool on racks.
Optional Topping:
Combine:
1/2 cup oats
1/2 cup brown sugar
1/4 cup all purpose flour
1/4 tsp. cinnamon
1/4 cup butter
After loaves have baked 15 minutes, sprinkle mixture over loaves evenly. Continue baking.
