Vegetable Plate with Yogurt Dip

I’m not exactly a devoted vegetarian – but I do love the occasional meatless meal, like my Lentil & Green Pea Shepherd’s Pie or a gigantic yummy Salad with Figs & Blackberry Ginger Balsamic Vinegar.

A nice light meal after a long, hot day – this simple vegetable plate made a simple and tasty dinner without heating up the kitchen, and only took a few minutes.

Yogurt Dip

For the yogurt dip, I mixed 4 heaping tablespoons of plain yogurt with 2 – 3 tsps. of onion soup mix. This works great if you want to snack on chips later too!;)

Another way to make this dip…is to use 3 heaping tablespoons of sour cream, 1 heaping tablespoon of plain yogurt, and add the onion soup! The yogurt gives the sour cream a “tangy” flavour!

My mother always used sour cream for this dip. If you use greek yogurt, no one will know the difference.;)

Really? That would save some money! Not have to pay for two different items, just to make dip! Thanks!!!

I’ve substituted greek yogurt for sour cream countless times over the years, just because I think it’s a healthier option. I’ve even served it with perogies and no one knew, not even the picky eaters lol.;)

I bought some greek yogurt like you suggested, and it tasted amazing! Just a slight “tang” to it, like the yogurt and sour cream! It was delicious! Thank again!!!

Nice!… and yogurt is good for you, so you don’t have to feel guilty after eating a bunch of it LOL.

Adriana, I’m not a vegitarian but like you like the odd meatless meal, i’m a particular fan of a nice Mushroom Strogonoff

It also works as a quick onion ‘chip dip’.:)
